Off the Plate: Olivia Garden Salad

Anyone who eats a salad at Olivia restaurant may notice the ingredients are very fresh. Olivia owner and Chef James Holmes gave Off the Plate's Damian Mandola a tour of the restaurant's garden and picked the ingredients needed for Olivia's garden salad with mint vinaigrette.

Olivia Garden Salad with Mint Vinaigrette

Ingredients:
16 oz. Olivia Garden salad greens
1 cup Olivia Garden mint vinaigrette (recipe below)

Clean salad greens and dry. Add salt and pepper greens and mix with vinaigrette.

Mint Vinaigrette (yield 1 quart)

Ingredients:
1 cup red wine vinegar
2 bunches fresh mint, chopped
2 tsp. Dijon mustard
2 tsp. salt
1 cup yogurt
1 shallot, minced and sautéed
3 cups Texas olive oil

Combine first six ingredients in a blender and pulse until well combined. With blender on low, gradually add olive oil until incorporated.
