Austin Business Journal Editor Colin Pope said
while the food service industry is a difficult one to work in, the upside to food trailers is the relatively low startup cost. Food trailers can also offer owners more freedom and the ability to get outdoors.

Pope said running a food trailer and a normal restaurant can be just plain hard because of low margins as well as staff and customer issues.
