Damian Mandola enlisted the help of Kathryn Dagar-Albarado of
Dagar's Catering to show us how to make an avocado kiwi salsa and bacon tostada.
Recipe compliments of BonAppetit.com with some modifications.
Avocado Kiwi Salsa and Bacon Tostada
Ingredients:
8 Bacon Slices
1 tablespoon and 2 teaspoons of lime juice
1 teaspoon of honey
1 pound of kiwi (peeled and cubed)
½ cup of chopped cilantro
2 teaspoons of hot sauce
Corn tortilla tostadas
2 Avocados, halved, pitted
Directions:
Cook bacon for 15-20 minutes in oven until crispy. Chop up into small pieces. Whisk the honey and 1 tablespoon lime juice together in medium bowl. Add bacon, kiwi cubes, cilantro, green onions, hot sauce and pinch of salt. Toss gently. Add diced avocados, lime juice, salt and pepper to taste. Place on chalupa shell. Enjoy!
