Two 8-ounce blocks cream cheese, room temperature
1 cup grated cheddar cheese
1/4 cup pickled jalapeno slices, well drained
1/3 cup coarsely chopped green onion
smoked paprika as needed (see hints below)
crackers as needed
cilantro or parsley as green and flavorful base
Add two 8-ounce room temperature blocks of cream cheese to a food processor and add 1 cup grated cheddar cheese and puree that until it's nice and smooth.
Then add 1/4 cup well drained pickled jalapeno peppers and 1/3 cup chopped green onion and pulse that until it's finely chopped and incorporated.
Scoop that onto a large sheet of plastic wrap and wrap that up and shape it the best you can into the shape of a football and then place it into the refrigerator to set up.
Once it has started to set up in the fridge, you can use your hands to reshape it a little bit if you need to.
Then serve it up over the top of some fresh cilantro or parsley leaves and sprinkle a generous amount of smoked paprika over the top, place some crackers around it and finish by using a knife to simulate the laces on top.
Use regular paprika instead of smoked paprika if you don't have the smoked variety.
Assemble this a day ahead of time so the cream cheese has a chance to really set up in the fridge.
The cilantro is a really nice touch--the flavor works really well with everything else
