The man behind the menu that serves 26 million customers a day paid a visit to Austin Wednesday.

McDonald's Executive Chef Dan Coudreaut was in town to speak to a culinary school and help promote the latest item to hit Mickey D's, oatmeal.

When it comes to what goes on the menu, Coudreaut says his team is always working to balance and evolve the menu.

"Just as we introduced our entree salads in 2004 or our snack wraps, now oatmeal. You're seeing a shift in our menu," he said. "Now Big Macs and Quarter Pounders are still wonderful products and people love them."

Coudreaut has been the executive chef for McDonald's since 2004. Prior to that, he worked in restaurants in Dallas.
