Years ago, four friends got together and started talking about how much everyone loves bacon. As time passed, no other businesses in town dedicated themselves to the savory cured meat – so they decided to do it themselves.
“Everyone loves bacon because it’s a comfort food,” said Jessica Champeau, general manager at Bacon “Everyone had it at home, everyone’s mom made it.”
Bacon, at 900 W. 10th St., serves up several varieties of bacon created by the restaurant. The house variety is cured and smoked before it’s cut about a quarter-inch thick.
In addition to the classic BLT, Bacon serves sweets that incorporate the salty crunch of bacon.
To make great bacon at home, Champeau said it’s important to cook your bacon slices in a pan that can drain the grease. That way you get crispy strips that aren’t soggy.
