Food trailers taking shape in outskirts of Round Rock

About one mile east of the Dell Diamond on Route 79, a trailer sits surrounded by an orange antique truck, a Chevrolet Bel-Air and farmland.

Speed by it on the highway, and it could go unnoticed. Pull into the parking lot full of pebbles, and you will see Rock-a-Billy's Shaved Ice. It could be the first step to a trailer food park just outside Round Rock city limits.

Owner Aaron Hines couldn't open his shaved ice trailer within the Round Rock city limits. So he leased an acre of farmland, shucked the corn himself and opened up shop.

"There's a lot of traffic out there, so we figured we'll give it a shot," Hines said. "The eateries and all this stuff in Austin, it's kind of a cool culture."

Right now the city doesn't have an ordinance allowing mobile food vendors in a permanent location, so Hines leased an acre of farmland in unincorporated Round Rock. He leased it before the harvest and spent days shucking the corn himself to make way for his shaved ice trailer.

"My landlord might think I'm crazy, but I was out here in the middle of the day with a truck and a trailer just throwing corn in the back," Hines said.

Since Hines is outside of city limits, Williamson County and City's Health District ensure he is following proper health codes. There's some concern about what could happen to his business if the city annexed the land where his trailer is located.

City Spokesperson Will Hampton said it isn’t an issue.

"The city does not have any plans to annex that property where the trailer is," he said.

Around this time of year Rock-a-Billy's brings in about 40 to 50 people a day, and business is especially booming after school and on weekends.

Hines received a call Wednesday with news that his next trailer endeavor, Johnny & June's Cupcakes, was approved for business. That project could open its doors by the end of summer, and Hines wants to introduce a food trailer next year.

"It's something we thought we'd give it a shot to maybe keep Round Rock weird," Hines said.
